On the eve of the Christmas and New Year holidays, doctors and specialists of the State Service for the Supervision of Food Safety and Consumer Protection of Ukraine are urging Ukrainians to be especially attentive to the quality of products and compliance with food preparation rules. The holiday period is traditionally accompanied by an increase in the number of food poisonings due to excessive amounts of food, violation of storage conditions, and purchasing products in questionable places.
Purchasing products for the holidays
Experts advise buying products only in trusted retail chains, specialized stores or markets where veterinary and sanitary expertise is carried out. It is worth avoiding buying food at spontaneous markets. Before purchasing, be sure to check the expiration date, appearance, integrity of the packaging and, if necessary, request documents confirming the safety of the products.
Storing food when the lights are out
In the event of a power outage, do not open the refrigerator or freezer. Food remains safe for up to 4 hours in the refrigerator and up to 48 hours in the freezer.
Key kitchen safety rules
To avoid food poisoning:

do not prepare large amounts of food for several days;

separate raw foods from cooked foods in the refrigerator;

use separate boards and knives for raw and cooked meat, fish and vegetables;

observe temperature conditions when baking meat, fish and minced meat;

wash vegetables and fruits thoroughly;

Use milk only boiled, unpasteurized cheese after heat treatment.
Special attention to salads, desserts and leftovers
Salads should be dressed immediately before serving and should not be stored at room temperature for more than 2 hours. Store cream-based pastries at 2–6 °C for up to 36 hours, and custard-based pastries for up to 6 hours. Leftovers from a holiday feast should not be consumed in the following days.
Celebration outside the home
When choosing a restaurant or cafe, choose establishments with a positive reputation and reviews. Compliance with sanitary standards and food quality is the key to a safe vacation.
When to see a doctor
If you experience symptoms of intestinal disease – nausea, vomiting, abdominal pain, fever – you should immediately seek medical attention. Self-medication can be dangerous.
